Starting with healthy ingredients, each salad is built layer by nutritious layer into a balanced entrée that relies more on fruit and veggies than meat. The spinach salad, aptly named after Popeye, is a tasty flavor combination of fresh spinach, juicy grape tomatoes, crunchy carrots and slightly spiced chicken. There are a number of homemade dressings to choose from, but the feta vinaigrette proved to be the best, with the Greek cheese adding a nice accent to the spinach leaves.

Served on a bed of dark, leafy greens and tomatoes, this will satisfy hearty appetites in a most heart-healthy way.
